THE EVOLUTION IN THE PRODUCTION OF DRY-CURED PRODUCTS THANKS TO THE TECHNOLOGY DEVELOPED BY INOX MECCANICA
Our automatic patented salting system with osmotic extraction for products to be dried and cured, allows to create inside the tumbler optimal conditions for an homogeneous distribution of the salt and at the same time a significant reduction of water in meat. In this way we get:
- greater microbiological stability
- improvement in meat color and consistence
- reduction of curing times
Our automatic stuffing machine PIC99B can stuff single pieces of meat or more muscles together in microperforated casing in order to realize compact and uniform bars and obtain a better slicing yield.
The integrated automatic loading system (optional with PIC99B) together with the innovative automatic sticks loader, allows to increase line’s productivity by reducing times and costs of production.
